Jimmy Joe’s Good’n’Easy Chicken Noodle Soup Recipe
Nothin’ warms the soul on these cold, crisp nights like a good bowl of Chicken Noodle Soup! But as busy as we all get, whose got the luxury of killing yerself a chicken and boilin’ its remains to make a great old-school chicken stock?
Well, hold your britches! Here’s a quick & easy Chicken Noodle Soup Recipe that’ll do yer tummy and disposition good! Great thing about it, too, ya use left over chicken!
Now when I cook up vittles like this, I don’t pay too close attention to exact measurements. It all comes down to personal taste. Just be careful not to overdo things like sal

Prep Time: How long does it take for ya to chop things?
Cooking Time: 20 – 30 minutes I’d say
Here’s What Y’all Need:
- A big stew pot
- Leftover Chicken
- 2 32-ounce things of Chicken Broth… Or! Try to find a package of Vegetable Broths and substitute it for one of the chicken broths The Vegetable Broth puts it over the top!
- A package of your favorite soup noodles like wide egg noodles, dumpling noodles…
- 3-4 stalks of Celery
- A medium-sized Onion
- Carrots, as many as ya like
- 3-4 Garlic Cloves (more if ya like)
- a little Dried Rosemary
- a little Smoked Paprika if ya got it, or regular Paprika
- a little Salt & Pepper
- About a tablespoon of Vegetable or Olive Oil.
Oh, and get some fresh bread. It goes great with big, soft hunks of fresh bread!
Here’s What Ya Do:
Chop up or shred yer chicken to the size pieces you like best.
Chop up yer onion, carrots, celery and crush yer garlic. Ya can also use that already chopped garlic that comes in jars.
Put yer stew pot on the stove over medium heat and pour in your splash of oil.
Toss in yer onion, celery, carrots and garlic and sauté until the about 5 to 7 minutes. Make sure to stir the stuff along the way a few times.
Pour in your chicken and vegetable broth. Add a few shakes of your dried rosemary, smoked paprika, and salt and pepper to taste.
Heat’er up to a boil then reduce the heat and simmer for as long as ya got. Like ten minutes or so.
Toss in yer noodles, maybe half the package or so, that’s up to you. If you toss in the whole pack and find ya need more liquid, ya can add some more broth if ya have any or some water.
Bring it all back to a boil and cook for as long as the noodle package says. What’s that 9 -11 minutes? (I shy to the lesser number)
Once the noodle are done, reduce the heat to way down low and toss in your chicken. Stir it up good.
Once your chicken is heated through, there ya go!! Delicious bowls of hearty & hardy Chicken Noodle Soup! And if ya have any soup left over, it done taste fantastic the next day! And look at that… TWO MEALS!
