Mmm…mmmmm! Ain’t gotta tell ya how grits go good with any meal. But this here time of the year, why, a good cheesy shrimp & grits is low-down southern good of the righteous kind! Especially if they’re Easy Cheesy Weezy Shrimp & Grits!

So here’s a quick, easy recipe that’ll have ya lickin’ the pot and beggin’ mamma fer more!

Servings:  6 (hell, with the way I eat it, more like 2-3)

Fixin’s:

  • 3 cups of water
  • half teaspoon of salt
  • 1 cup of quick cookin’ grits
  • 2-3 handfuls of shredded cheddar cheese
  • 1 to 1 and a half  pounds (dependin’ on size, but use medium) of fresh or frozen raw shrimp (shell it, pull off them tails and remove those poop shoots)
  • Salt and Pepper to taste
  • And some other stuff I reckon I’ll tell ya long the way.

Fixin’ It Up:

Cookin’ yer shrimp: Do it however ya prefer.

Ya can boil’em in a pot. If ya do, throw in a good amount of Old Bay seasoning for zing. (if ya ain’t got Old Bay, throw in a couple chicken bouillon cubes)

Ya can stick the shrimp on skewers and grill’em up (if ya ain’t got skewers, ya can fashion some up outta wire coat hangers).

Or ya can git out yer skillet, heat up 2 tablespoons of butter with 2 teaspoons olive oil and saute those suckers. If ya like, dice up fine some scallions and red bell pepper and saute with the shrimp as well.

The key is not to overcook the shrimp. No matter how ya cook it, it’s about 3-6 minutes (3 minutes a side on the grill) or til it don’t look raw no more… nice, healthy pink.

2. Now, or while yer shrimpin’ it, Cook up yer quick grits.

In a good sauce pot, boil and salt yer water. Stir in yer quick grits and reduce heat. Cook slowly fer about 5 minutes, but I’m sure ya knew that. Remove from heat. Stir in yer cheddar cheese so it melts throughout the grits.

Now ya can be all fancy-like and spread the grits on individual plates and arrange the shrimp on top the grits. Or, hell, throw the shrimp in the grits and let everyone dig on in the pot!
